  • 1 pint cherry tomatoes approximately 2 cups

  • ¼ teaspoon black pepper

Instructions

  • Preheat the oven to 425°F and prepare a 1-quart baking dish.
  • In a medium mixing bowl, combine the cherry tomatoes with minced garlic, olive oil, balsamic vinegar, salt, pepper, and dried thyme. Stir well to ensure the tomatoes are evenly coated with the flavorful mixture.
  • Transfer the seasoned tomatoes to the prepared baking dish, spreading them out into an even layer.
  • Roast in the oven for about 20 minutes, or until the tomatoes soften and begin to burst, releasing their natural juices. Once done, remove from the oven and allow them to rest for 5 to 10 minutes, letting the flavors deepen.
