Ingredients

  • cups whole rolled oats
  • 1 cup very smooth creamy natural peanut butter or cashew butter
  • cup honey
  • 1 teaspoon vanilla extract
  • Heaping ½ teaspoon sea salt
  • cup mini chocolate chips*
  • 3 tablespoons pepitas or crushed peanuts or cashews

Instructions

  • Line an 8x8-inch baking pan with parchment paper, ensuring there is some overhang on the sides for easy removal.
  • In a large mixing bowl, combine the peanut butter, honey, vanilla extract, and sea salt. Stir well until the mixture is completely smooth and well blended.
  • Add the rolled oats, mini chocolate chips, and pepitas (or chopped nuts). Initially, the mixture may appear crumbly, but continue stirring until it fully incorporates. Once the ingredients are evenly distributed, transfer the mixture into the prepared baking pan.
  • Use a second piece of parchment paper along with the back of a measuring cup to firmly press the mixture into an even, compact layer. Refrigerate for at least one hour, allowing the bars to set properly.
  • Once chilled and firm, remove from the pan and slice into bars of your desired size. Store the granola bars in the refrigerator to maintain their texture and freshness.

Notes

Using regular-sized chocolate chips can make the bars more fragile. If mini chocolate chips aren't available, chop larger chocolate pieces into smaller bits for better cohesion.
