Ingredients

  • 1 cup self-rising flour
  • ¾ cup blended cottage cheese blend approximately 1 cup whole cottage cheese until smooth
  • Pinch of salt optional

Instructions

  • Begin by adding the cottage cheese to a blender and processing it until it becomes silky smooth and lump-free.
  • In a large mixing bowl, combine the smooth cottage cheese with the self-rising flour and an optional pinch of salt. Stir the mixture using a sturdy spoon or rubber spatula until it forms a crumbly dough.
  • Transfer the crumbly dough onto a clean, lightly floured cutting board. Using your hands, knead and press the dough together for 1 to 2 minutes until it comes together into a cohesive and smooth ball.
  • Divide the dough evenly into four portions using a sharp knife. Shape each portion into a smaller round ball.
  • Preheat a large skillet over medium heat and add 1 to 2 tablespoons of oil, ensuring it coats the base of the pan evenly.
  • While the skillet is heating, dust your cutting board and the top of one dough ball with a light layer of flour. Use a rolling pin to roll the dough out into a thin, round flatbread. If the dough sticks, sprinkle with additional flour as needed. Repeat the rolling process with the remaining dough balls.
  • Carefully place one flatbread round into the preheated skillet. Cook for 2 to 3 minutes, or until it puffs slightly and the underside develops a light golden hue. Flip and continue cooking for another 2 minutes, until both sides are golden brown and the bread is cooked through. Remove from the skillet and set aside. Repeat with the remaining rounds.
  • Serve warm with your choice of toppings such as creamy tzatziki, savory hummus, or any dip you enjoy.
